In a time of crisis we wanted to work with local partners to showcase that we are now, more than ever, committed to working as one team and staying in touch with our guests and customers no matter what. So we thought, who better to partner with to create our favorite Smith & Wollensky dishes during this crisis, in the Clarke Showroom and Test Kitchen and bring them into your homes and kitchens via video! CAJUN RUB FILET

1 ea. Center Cut Filet Mignon – Buy here .
1 Tbsp White Pepper
1 Tbsp Cayenne
1 Tbsp Chili Powder
1 Tbsp Black Pepper
½ Tbsp Garlic Powder
½ Tbsp Cumin
½ Tbsp Dry Thyme
½ Tbsp Dry Basil
½ Tbsp Salt
1 Large Onion, sliced
1 Tbsp Cajun Rub
1 Quart Vegetable Oil
Cajun Spice Rub:
- Combine all ingredients, mix well.
- Slice onion and place in pan with oil over low to medium heat. Add 2 heaping Tbsp of Cajun Rub and mix with onions. Strain onions.
- Season the filet mignon with salt and pepper and cook one temperature below your desired
- Rest the filet for 10 min
- Roll in Cajun spices, cook for 2-3 minutes to blacken the seasoning and finish the cooking
